Looking for the perfect side salad for your summer BBQ’s?

This week’s recipe is a twist on the classic ‘Potato Salad’. We’ve got a secret ingredient that will turn this delicious dish into a healthy and light crowd pleaser! (Can you guess what it is?)

Serves: 4

Ingredients:
• 3 medium potatoes, diced
• 5 spring onions, chopped
• Fresh dill 
• 3 tbsp natural yoghurt
• 1 tbsp lemon juice
• 1 tsp vinegar
• 1 tbsp olive oil
• 2 tsp low fat Dijon mustard

Method:
• Steam potatoes by placing them in a metal colander on top of a saucepan with boiling water, with a lid to cover.
• Once potatoes are soft (poke with a fork) remove from heat and place in a bowl.
• Allow to cool for 10 minutes, cover with plastic wrap and place in fridge for 30 minutes.
• Take out of fridge and remove plastic wrap, then add the spring onion, parsley, yoghurt, juice, vinegar, olive oil and mustard.
