Who doesn’t love pancakes??
This ‘Banana Pancake’ recipe is FODMAP friendly and a great little weekend breakfast treat for the kids to enjoy!
Serves: 2
Ingredients
• 1 large banana
• 2 eggs
• 1 teaspoon olive oil
• ½ cup LSA mix (linseed, sunflower seed, almond meal)
• 1 tablespoon chia seeds
• 1 teaspoon vanilla extract
• ½ teaspoon cinnamon
• 1 cup blueberries
• 1 cup lactose-free yoghurt
Method
• Whisk or blend in a food processor eggs and banana until a smooth consistency is reached
• Add the LSA meal, chia, vanilla and cinnamon and stir through until there are no lumps
• Leave the mixture to sit for a few minutes to thicken
• Heat a large fry pan with 1 tsp olive oil on a medium heat
• Spoon 1 tablespoon of the pancake mixture into the fry pan (or more if you want to make bigger pancakes)
• Leave to cook for 2 minutes, then flip over and cook on the other side
• Serve with yoghurt and berries
Tip: keep an oven on low to place your pancakes in while the others are cooking, this will prevent them from going cold
