This week’s recipe is the classic ‘Zucchini Slice’ – a healthy savoury slice that is packed full of protein and vegetables making it a great choice for the whole family including the little ones!! It also works well cold for quick and easy lunches!

Serves: 6

Ingredients:
• 3 zucchinis, grated
• 1 onion, grated
• 1 potato, grated
• 1 can of corn kernels, drained and rinsed
• 4 slices of lean ham
• 1 cup low fat cheese, grated
• 6 tbsp wholemeal flour
• 4 eggs, whisked
• 2 tsp black pepper, ground

Method:
Pre-heat oven to 160C.
Line a quiche dish with baking paper.
Mix all ingredients together.
Bake for 1 hour.
Serve hot or cold.
